Rote Grütze mit Vanillesoße is a delectable summertime treat in Germany. Ingredients

Red berry pudding:
  • 4 cups (600 g) fresh red berries and cherries (excluding strawberries)
  • 1/2 cup (120 ml) red wine
  • 4 Tbsp (60 ml) sugar
  • 1-in cinnamon stick
  • 2 Tbsp (15 g) cornstarch
  • 2 Tbsp (30 ml) water
Vanilla sauce:
  • 1 cup (240 ml) milk
  • 2 egg yolks
  • 4 Tbsp (50 g) sugar
  • 1/4 tsp (1.5 g) salt
  • 1 tsp (5 ml) vanilla extract

Directions

  1. Pudding:
  2. Bring berries, wine, sugar, and cinnamon to a gentle boil. Simmer for 20 minutes.
  3. Whisk cornstarch into water for a smooth paste. Add to berries and simmer for 5 minutes.
  4. Pour pudding into serving bowl.
  5. Completely cool, cover, and refrigerate overnight.
  6. Sauce:
  7. Scald milk and keep warm.
  8. Whisk yolks, sugar, and salt to a thick froth. Gradually add milk.
  9. Bring mixture to a gentle boil, simmering on low without boiling until it thickens for 15–20 minutes. Keep stirring to prevent sticking.
  10. Serve sauce warm or cold with rote Grütze.

Notes

A quarter cup jam substitutes for one cup fresh currants.
