Forelle mit Mandeln (Trout with Almonds)

Forelle mit mandeln, or trout with almonds, is a no-frills recipe that perfectly highlights the namesake ingredients. While trout is one of the most common and popular fish in Germany, this dish usually makes a bold statement on the dinner table as most Germans prepare it using the whole fish. Trout is also often the centerpiece of the meal during the Christian celebration of Gründonnerstag, or Mourning Thursday, before Easter.

Ingredients

  • 2 lbs (900 g) trout, cleaned and scaled
  • Juice of 1 lemon
  • Salt, to taste
  • Ground black pepper, to taste
  • 2 Tbsp (30 g) butter
  • ½ cup (120 ml) olive oil
  • 2 Tbsp (20 g) almond flakes
  • Chopped parsley, as needed for garnish

Directions

  1. Season the inside and outside of the trout with lemon juice, salt, and black pepper.
  2. Heat butter and olive oil in a large skillet over medium-high heat.
  3. Add trout and cook for about 3 minutes on each side.
  4. Add almonds to the pan and fry them with the trout for about 3 minutes, turning fish if necessary.
  5. Garnish forelle mit mandeln with parsley and serve hot.
