Apfelstrudel (Apple Strudel)

Beloved in Germany, Austria, and other countries in the region, apfelstrudel features apples baked in a pastry dough. It is popular both as a dessert and an accompaniment to afternoon coffee. The oldest strudel recipe, a handwritten note located at the Wienbibliothek im Rathaus (Vienna Library in City Hall) in Austria, dates back to 1696. Both homemade and commercially-produced strudels are common in Germany.

Ingredients

  • 1 lb (450 g) all-purpose flour
  • 7 oz (200 g) sugar
  • ½ lb (225 g) butter
  • 3 eggs
  • Pinch of salt
  • 1 tsp (5 ml) vanilla extract
  • 2 lbs (1 kg) apples, peeled, thinly sliced
  • 1 Tbsp (15 ml) vanilla sugar
  • Powdered sugar, as needed for topping

Directions

  1. Grease two baking sheets and preheat oven to 400°F (200°C).
  2. Sift flour into a mixing bowl.
  3. Add sugar and salt.
  4. Mix in the butter followed by the egg and vanilla to form a smooth dough.
  5. Divide dough in half.
  6. Roll each half out to a thin rectangle.
  7. Spread apples evenly over dough.
  8. Sprinkle with vanilla sugar.
  9. Roll up each strudel.
  10. Pinch seams and ends together securely.
  11. Transfer strudels to prepared baking sheets.
  12. Bake for 60 minutes, until golden.
  13. Sprinkle with powdered sugar and serve warm or at room temperature.
  14. Apple strudel can be served plain but is often accompanied by vanilla-flavored whipped cream or ice cream.

Notes

  • Up to 2 tablespoons (30 ml) of sliced almonds, 1/3 cup (80 ml) of raisins, and 1 tablespoon (15 ml) of cinnamon may be added to the filling before rolling up the strudel.
