Ingredients
- ⅓ cup (79 ml) and 2 Tbsp (30 ml) water
- 1 tsp (2.6 g) ground cinnamon
- 1½ cups (300 g) sugar, divided
- 1 tsp (5 ml) vanilla extract
- 2 cups (300 g) raw whole almonds
Directions
- Place water, cinnamon, and 1 cup (200 g) sugar into a saucepan set over medium heat, stirring continuously.
- Add almonds once the mixture is boiling and stir continuously until the water has boiled out and the almonds look dry and fuzzy.
- Reduce heat to just below medium and keep stirring until the sugar has melted and almonds are shiny and evenly coated.
- Reduce heat to low and add the remaining ½ cup (100 g) sugar and vanilla extract, stirring until the sugar has melted and almonds are evenly coated with clumps of sugar.
- Transfer almonds to a lined baking sheet and use a wooden spoon to spread them out, separating any clumps.
- Let almonds cool completely and then serve or store them in an airtight container.
Notes
- This recipe makes 2 cups (300 g) of candied almonds with a ¼ cup (37.5 g) considered a serving.
