Ingredients

  • ⅓ cup (79 ml) and 2 Tbsp (30 ml) water
  • 1 tsp (2.6 g) ground cinnamon
  • 1½ cups (300 g) sugar, divided
  • 1 tsp (5 ml) vanilla extract
  • 2 cups (300 g) raw whole almonds

Directions

  1. Place water, cinnamon, and 1 cup (200 g) sugar into a saucepan set over medium heat, stirring continuously.
  2. Add almonds once the mixture is boiling and stir continuously until the water has boiled out and the almonds look dry and fuzzy.
  3. Reduce heat to just below medium and keep stirring until the sugar has melted and almonds are shiny and evenly coated. 
  4. Reduce heat to low and add the remaining ½ cup (100 g) sugar and vanilla extract, stirring until the sugar has melted and almonds are evenly coated with clumps of sugar.
  5. Transfer almonds to a lined baking sheet and use a wooden spoon to spread them out, separating any clumps.
  6. Let almonds cool completely and then serve or store them in an airtight container. 

Notes

  • This recipe makes 2 cups (300 g) of candied almonds with a ¼ cup (37.5 g) considered a serving.
