Grünkohl (Kale)

Grünkohl, the German word for “kale,” is a hearty stew made with kale and sausage. The dish is widely considered a staple of German comfort food. Far from being bland or light, grünkohl is a perfect dish for consuming a healthy dose of vegetables in a simple and savory single-pot meal. As the kale cooks in this slow-and-low recipe, it becomes tender and absorbs the rich flavors of the sausage and mustard. Full of rich flavor, it is no wonder this is one of the first things Germans reach for at dinnertime on a chilly night.

Ingredients

  • 2 Tbsp (30 g) butter
  • ¼ lb (113 g) speck
  • ½ lb (226 g) kielbasa
  • 3 small potatoes, diced
  • 3 lbs (1.35 kg) kale
  • 2 cups (480 ml) chicken stock
  • 1 Tbsp (18 g) mustard seed
  • Salt, to taste
  • Ground black pepper, to taste
  • Dijon mustard, as needed for serving

Directions

  1. Heat butter in a large pan set over medium heat.
  2. Add speck, kielbasa, and potatoes, cooking for about 20 minutes until golden-brown.
  3. Add kale, chicken stock, and mustard seed to the pan.
  4. Reduce heat to a simmer and cook the grünkohl for about 2 hours.
  5. Add salt and black pepper to taste.
  6. Serve hot with Dijon mustard on the side.

Notes

  • Thick cut bacon can be used instead of speck.
