Grünkohl (Kale)
Grünkohl, the German word for “kale,” is a hearty stew made with kale and sausage. The dish is widely considered a staple of German comfort food. Far from being bland or light, Grünkohl is a perfect dish for consuming a healthy dose of vegetables in a simple and savory single-pot meal. As the kale cooks in this slow-and-low recipe, it becomes tender and absorbs the rich flavors of the sausage and mustard. Ingredients
- 3 lbs (1.35 kg) kale
- 2 cups (480 ml) chicken stock
- 1/2 lb (226 g) kielbasa
- 1/4 lb (113 g) speck
- 2 Tbsp (30 g) butter
- 3 small potatoes, diced
- 1 Tbsp (18 g) mustard seed
- salt and pepper to taste
- Dijon mustard, to serve
Directions
- Heat the butter in a large pan over medium heat. Add the speck, kielbasa, and potatoes and cook until golden brown, about 20 minutes.
- Add the kale, chicken stock, and mustard seed to the pan.
- Reduce the heat to a simmer and cook the Grünkohl for about 2 hours.
- Add salt and pepper to taste and serve hot with Dijon mustard.
Notes
