Mousse au Chocolat (Chocolate Mousse)
Mousse au chocolat may be the perfect dessert, with its rich taste and silky-smooth texture. Mousse, which means “foam,” can be light and fluffy or creamy and thick. Mousse originated in France in the 18th century, with chocolate brought to Europe by Spaniards after learning of its use by the Aztecs. A delicious finish for any meal, the creamy texture of mousse au chocolat is similar to pot de crème.

Ingredients
- 3 (4-ounce) bars bittersweet chocolate, broken into pieces
- ½ cup (64 g) sugar
- 1/3 cup (78 ml) strong coffee
- 4 egg yolks
- 1 cup (340 g) whipping cream, divided
- 2 Tbsp (30 ml) orange liqueur
- ½ tsp (3 ml) vanilla extract
- Whipped cream, as needed for topping (optional)
- Cookie curls, as needed for topping (optional)
Directions
- Place chocolate pieces, sugar, and coffee in a medium saucepan set over low heat, stirring constantly until melted.
- Remove saucepan from heat.
- Whisk together egg yolks and ¼ cup of whipping cream in a bowl.
- Add about a quarter of melted chocolate to egg mixture, whisking to combine.
- Pour chocolate and egg mixture into saucepan with remaining melted chocolate and cook while stirring constantly over medium-low heat until thermometer reads 160°F.
- Remove saucepan from heat and stir in orange liqueur and vanilla extract.
- Let mixture cool to room temperature, stirring occasionally.
- Beat remaining whipping cream, about ¾ cup, until soft peaks form.
- Fold beaten whipping cream into cooled chocolate mixture.
- Spoon mixture into serving dishes.
- Cover dishes and chill them in the refrigerator until ready to serve.
- Garnish each serving with a dollop of whipped cream and cookie curls if desired.
