Mousse au Chocolat
Mousse au Chocolat may be the perfect dessert, with its rich taste and silky smooth texture. Mousse, which means “foam,” can be light and fluffy or creamy and thick. Mousse originated in France in the 18th century, with chocolate brought to Europe by Spaniards after learning of its use by the Aztecs. A delicious finish for any meal, the creamy texture of mousse au chocolat is similar to pot de crème. Recipe Servings: Serves 8

Ingredients
Ingredients: 3 (4-ounce) bars bittersweet chocolate, broken into pieces- 1/2 cup (64 g) sugar
- 1/3 cup (78 ml) strong coffee
- 4 egg yolks
- 1 cup (340 g) whipping cream, divided
- 2 tablespoons (30 ml) orange liqueur
- 1/2 teaspoon (3 ml) vanilla extract
Directions
- Add first three ingredients to medium saucepan. Cover and stir constantly over low heat. Remove from heat.
- Beat egg yolks well and stir in ¼ of whipped cream. Whisk one-forth of chocolate mixture into egg mixture; whisk back into remaining chocolate mixture.
- Cook while stirring constantly over medium-low heat until thermometer reads 160 degrees. Remove from heat.
- Stir in orange liqueur and vanilla. Cool to room temperature, stirring occasionally.
- Beat remaining whipped cream, about ¾ cup, until soft peaks form.
- Fold one-fourth whipped cream into cooled chocolate mixture. Fold in remaining whipped cream.
- Spoon mixture into serving dishes. Cover and chill.
- Garnish with cookie curls or whipped cream if desired.
