Rumkugeln (Rum Balls)

These addicting rum balls are a favorite at Christmas and the New Year. Simple to make, they look and taste exquisite, with a crunchy candy exterior giving way to a smooth, buttery center that melts on the tongue. Rumkugeln make a great gift for a host or hostess or can be enjoyed with a glass of red wine or strong coffee. Variations include finely chopped walnuts or almonds.

Ingredients

  • ¾ cup + 2 Tbsp (195 g) unsalted butter
  • 3¾ cup (450 g) powdered sugar
  • 2¼ cups (13 oz/368 g) semi-sweet chocolate chips
  • 1½ cups (170 g) almond meal or hazelnut meal
  • 6 Tbsp dark rum
  • 1 tsp vanilla extract
  • Chocolate sprinkles, as needed

Directions

  1. Melt chocolate chips over a double boiler or in the microwave.
  2. Melt butter in a saucepan.
  3. Add powdered sugar, stirring to combine.
  4. Cook powdered sugar mixture for 1–2 minutes or until smooth.
  5. Stir nut meal into melted chocolate (still over the double boiler to keep warm).
  6. Add powdered sugar mixture, rum, and vanilla extract, stirring to thoroughly combine.
  7. Divide chocolate mixture and roll into balls that are ¾–1 inch in diameter.
  8. Roll balls in chocolate sprinkles and let cool.
  9. Serve rumkugeln at room temperature. 

Notes

  • Store rumkugeln in an airtight container in a cool place or in the fridge, and they'll keep for several weeks.
  • Cocoa powder, desiccated coconut, or finely chopped nuts may be used in place of chocolate sprinkles.
