Spätzle (German Dumplings)
Spätzle are traditional German dumplings, similar to Italian gnocchi. A welcome side to almost any entrée, spätzle pair particularly well with any dish that has a sauce or gravy. The ideal vehicles for any sort of hearty sauce, these dumplings also are popularly eaten sautéed with butter, bacon, onions, and cheese. In Southern Germany, it is common to prepare spätzle for dessert, typically mixed with either apples or cherries and slathered in cinnamon, sugar, and butter.

Ingredients
- 1 cup (120 g) all-purpose flour
- ½ tsp (3 g) ground nutmeg
- 1 pinch ground black pepper
- ½ tsp (3 g) salt
- 2 eggs
- ¼ cup (60 ml) milk
- 2 Tbsp (30 g) butter
- 2 Tbsp (30 ml) parsley, chopped
Directions
- Combine flour, nutmeg, black pepper, and salt in a large bowl.
- Beat together eggs and milk in a separate bowl.
- Add egg mixture to dry ingredients and mix until smooth.
- Press dough through a spätzle mold or large-holed sieve to create small dumplings.
- Bring a large pot of water to a boil.
- Drop about a third of the dumplings into boiling water, being careful not to overcrowd the pot.
- Remove dumplings from pot using a slotted spoon when they float to the surface, after about 5 minutes.
- Repeat boiling process with remaining dumplings.
- Melt butter in a large skillet set over medium heat.
- Add dumplings to the hot butter and fry for 1–2 minutes, until they start to brown.
- Remove spätzle from skillet and sprinkle with parsley.
- Serve warm.
