Spätzle (German Dumplings)
Spätzle are traditional German dumplings, similar to Italian gnocchi. A welcome side to almost any entrée, spätzle pair particularly well with any dish that has a sauce or gravy. The ideal vehicles for any sort of hearty sauce, these dumplings are also popularly eaten sautéed with butter, bacon, onions, and cheese. In southern Germany, it is common to prepare spätzle for dessert, typically mixed with either apples or cherries and slathered in cinnamon, sugar, and butter. Recipe Servings: Serves 6

Ingredients
- 1 cup (120 g) flour
- 1/4 cup (60 ml) milk
- 2 eggs
- 1/2 tsp (3 g) ground nutmeg
- 1 pinch pepper
- 1/2 tsp (3 g) salt
- 2 Tbsp (30 g) butter
- 2 Tbsp (30 ml) parsley, chopped
Directions
- Combine flour, nutmeg, pepper, and salt in a large bowl. In another container, beat together eggs and milk; add egg mixture to dry ingredients and mix until smooth.
- Press dough through Spätzle mold or a large-holed sieve to create small dumplings.
- Bring a large pot of water to a boil. Without overcrowding pot, drop about 1/3 of dumplings into water. Spätzle will float to surface when cooked, after about 5 minutes.
- Remove dumplings from pot as they finish and repeat process with remaining dough.
- In a large skillet, heat butter over medium heat. Cook dumplings for 1–2 minutes, until they start to brown.
- Sprinkle Spätzle with parsley and serve warm.
